Make This Delicious Smoky Mountain Chicken

A Savory Dish That Will Take You Straight to the Appalachian Mountains

Smoky Mountain chicken is a simple but downright delicious and hearty dish. One bite and you’ll be transported to the mountains of Appalachia where restaurants pocket its base.  Their menus boasting rich, flavorful, and to-the-point dishes that define the area much like the mountains themselves.

Smoky Mountain chicken is one such dish. It both fills up travelers on the Appalachian Mountain Trail and restores them after a day of physical activity. However, you don’t have to visit the Volunteer State to try or revisit this tasty meal. Make your own in your power pressure cooker and finish on the fire.

Smoky Mountain Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Seasoning mix of ½ tsp salt, ½ tsp pepper, ½ tsp onion powder, ½ tsp garlic powder
  • 2 1/2 cups barbeque sauce
  • 2 tsp liquid smoke
  • 1 c water
  • ¼ c Chopped cherry tomatoes
  • ¼ c Chopped green onion
  • 4 slices Gouda or Colby cheese
  • 4 slices honey ham

Directions:

  1. Season chicken and place in pot. Pour 1 c. water and 2 c. BBQ sauce in pot. Follow manufacturer directions for cook time (approximately 15 min. with 10 min. natural release)
  2. Brush cooked chicken with remainder of sauce and place on a grate over low fire. Brown 3-4 minutes each side. (Rainy day? Finish in 375-degree oven instead).
  3. Top each breast with ham and cheese. Remove from heat when cheese is melted. Garnish with tomatoes and onions.

Fine Pairings

As a flavorful dish all its own, smoky mountain chicken needs only light or medium-bodied white blend. Our budget-minded bottle is Kitchen Sink White, a Wine Enthusiast favorite made from Chardonnay, Chenin Blanc, and Gewurztraminer. With both melon and floral notes, this light-bodied wine has balanced acidity and a smooth finish.

If this is date night, you can take it up a notch with Valdesil Sobre Lias Godello Valdeorras, a fresh, clean Spanish white. A medium-bodied wine, it has citrus and fruit aromas complemented by suggestions of jasmine.
